Originally from the South-West of France, chef Jean Sévègnes is a master of classic French cuisine. He is co-owner with his wife and sommelier Roxane Sévègnes of the famous Paris bistro "le Café des Ministères". Known for his signature vol-au-vent, he varies his ingredients with the seasons, from morels and green asparagus in spring to lamb sweetbreads and lobster in summer.
