In his bistro in MĂ©nilmontant, with its scurrilous history (a former lupanar) and compound name (Dino+Ilia, the chef's ancestors), the divine Florentine puts on one hell of a pasta party. His secret? The mantecatura, that alchemical gesture of emulsifying the pasta sauce to produce a creamy texture that is nothing short of miraculous.
