A former top student of Alain Passard and Marc Veyrat, this crafty Norman has made a name for himself at his establishment on Rue Surcouf. Since 2015, his auteur restaurant with a Scandinavian minimalist design has become a culinary research center where he crafts surprise menus brimming with innovative ideas. Much like his friend Alexandre Mazzia, he continuously refines techniques to serve the essence of taste, delivering a cuisine of concentration in every sense of the word, as exemplified by his famous eel-black sesame-green apple dish. However, due to his concern for the environment, he has replaced the endangered eel with haddock. In his kitchen, technical prowess, flavor, and eco-responsibility are seamlessly integrated.
