Trained by Gagnaire and Alléno, Sébastien Tantot was for years the brilliant factotum at Le Petit Nice in Marseille, before swapping the full sun of the Mediterranean for the opaline mists of the Oise. This ultra-sensitive, skin-deep artist of the kitchen seems to be crossed by the muses of the table. In his Auberge à la bonne idée, a dreamlike building in Saint-Jean-aux-Bois, he interprets a cuisine that is as much in the grand French tradition as it is in literary reverie, with a style as intense as it is melancholy, like no other. In short, Julien Sorel opens a restaurant.
