Mers-les-Bains, with a population of less than 3,000, is a Picardy seaside resort that seems frozen in the 1950s. There, opposite the beach, slumbered a depressed hotel, but it was without counting on this unlikely duo who resurrected the Itinérance, refreshed its walls and propelled its restaurant into the 21st century. One, Jonathan Caron, worked his way up from a young man in the Paris restaurant business. The other, Manogeran Shasitharan aka Jack, is originally from Malaysia, and stayed in France in spite of himself, having hit rock bottom before finding a way out in the kitchen. Thanks to the shrewd nose of a trainer who spotted his talent, Jack tried his hand at a Michelin-starred restaurant before landing in Picardy, no doubt due to a GPS bug. Since then, he has invented a dazzling, intuitive gastronomy with powerful Malaysian notes and polished French technique. One of the most unprecedented cuisines of recent years.
