Florent Pietravalle has deep roots in haute gastronomy, having worked in the kitchens of Pierre Gagnaire, Joël Robuchon, and Jean-Luc Rabanel. Since taking charge of the kitchens at La Mirande in Avignon in 2016, he has earned a Michelin star in 2019, three Ecotable macarons in 2020, and the Green Star in 2021.
