Description
Born in Brazil and arriving in Milan in 2011, Mauricio Zillo has Italy running through his veins. A globetrotter who has rubbed shoulders with sacred monsters (Bocuse, Atala, Arzak and Santamaria), he showed off his iconoclastic talent at A Mere in Paris, a pocket bistro in the 10th arrondissement, before planting his knives in Palermo to become chef of the Gagini restaurant. Multicultural, sharp and sophisticated, his cuisine is fluent in the culinary languages of the South (America as well as Europe): his dishes are marked by a local exoticism, like this Sicilian-grown papaya, which combines with pure local produce.
