Bistrot Instinct offers a bistronomic experience led by Maximilian Wollek, chef and co-owner. Maximilian began his career with Yannick Alléno at Le Meurice before moving to the kitchens of Pavillon Élysée Lenôtre. After a rich experience in Parisian bistronomy, he opened Bistrot Instinct in 2019.
At Bistrot Instinct, Maximilian showcases his creativity by blending traditional techniques with global flavors, playing with textures and aromas to create surprising and comforting dishes. Each menu is crafted with respect for seasonality and locally sourced ingredients, emphasizing locavorism.
Lou and Simon, his partners, bring their expertise from prestigious establishments like Le Bristol and George V. They ensure precise, warm, and high-quality service, select French wines from eco-friendly vineyards, and create delicious and balanced cocktails.
Bistrot Instinct is proud to have been a member of the Collège Culinaire de France since 2021 and to be listed in the Michelin Guide since 2022.
