With Alsace at heart, Pascal began his pastry career in the region's top establishments. His journey took him higher and further as he led one of the capital's grand hotels before returning to Auberge de l’Ill**. There, he developed a pastry style centered on aroma. His approach is grounded in selecting the finest ingredients, expressed through the nuanced work of flavors, and marked by the richness of textures. His essential pastry style, which paves the way for dazzling creativity, was awarded the "Passion Dessert 2024" prize by the Michelin Guide.
