Since 2019, Sarah Mainguy (ex-Hollybelly in Paris) has been cranking up the culinary decibels at Vacarme, the funky downtown Nantes bistro she runs with her partner Damien Crémois. Recently, the inventive Top Chef finalist opened a new Scandinavian-style address, less noisy and more in line with the Cosmos: Freia. A hole of greenery in the middle of the asphalt, a dining hut perched on the roof of a garage facing the station, where herbs and vegetable plants form an urban canopy. Here, the green-thumbed chef advocates a strict respect for the seasons, the vegetalization of appetites and the horizontality of the organizational chart. What if this were the gastro restaurant of the Anthropocene era?
