He is one of the pioneers and leaders of specialty coffee in France, with an analytical vision of the market, its evolution and its future. He is the author of several books, including "A l'Origine, Voyages en terres de café". He campaigns for the recognition of coffee as a multiple, traceable local product, and calls for a transition in consumption patterns.
