Description

Nadia Sammut leads the first gluten-free Michelin-starred restaurant, L’Auberge La Fenière, located in the heart of the Luberon. She has also established Kom&sal, a brand offering bakery, pastry, and biscuit products made from local gluten-free flours, as well as a training organization. For the past 10 years, she has been developing a holistic approach to gastronomy that considers both environmental and health impacts. To ensure this approach benefits everyone, she regularly engages in solidarity projects, such as "Des étoiles et des femmes" and the "Le République" restaurant in Marseille.
