Opening in October 2023 in the shadow of the cathedral and a stone's throw from the banks of the Lot, Bonnie restaurant is the address to watch in Cahors. Charlotte Bonnie is in charge of the stoves, with a market cuisine free of pretence, and her husband Rodolphe presides over the dining room and cellar. Cot cadurcien - also known as malbec or auxerrois, depending on the latitude - naturally takes pride of place here.

Red or nothing. The Cahors vineyards are fiercely proclaiming their color, and at the same time asserting the predominance of a deep, intense grape variety, cot. A strong character for a PDO that just needs to be better known.
