Description
In 2009, Frédéric REVOL founded an organic whisky and eau-de-vie distillery where every stage in the production process, from soil to bottle, is carried out on site.
Since then, Domaine des Hautes Glaces has been producing natural, plot-based and vintage eaux-de-vie and whisky.
Over the last few years, we've moved towards a more collective project by forming an agroecological mountain farming network to source all our raw materials, while remaining true to our initial vision: the quest for taste and terroir, while controlling our production process from A to Z, here in the Trièves.
The question of fermentation is obviously an issue. After half a dozen years of research, we're happy (and a little proud) to have been using mostly wild and indigenous yeasts for the past 3 years.
